Street corn chicken bowls (print)

Description: Street corn flavored chicken, rice and corn in a bowl
Ingredients
For the chicken:
1 pack of chicken breasts (about 4.5 pounds), cut into small strips
8 tbsp olive oil
8 tbsp lime juice
8 tsp chili powder
4 tsp ground cumin
4 tsp paprika
2 tsp garlic powder
2 tsp onion powder
Salt and pepper to taste

For the corn:
3 cans corn, drained
3 tbsp Mayo
3 tbsp sour cream
3 tsp lime juice
1.5 tsp chili powder
3/4 tsp paprika
3/4 c. Cojita cheese
Chopped fresh cilantro to taste

For the rice:
8 c. Cooked white or brown rice
8 tbsp lime juice
Chopped fresh cilantro to taste

* I used 1 bunch of cilantro divided between rice and corn*

Optional topping ideas:
Salsa
Sour cream
Guacamole
Diced tomatoes
Cojita
Lime juice
Sliced avocado
Diced jalapeƱo
Directions
Mix chicken marinade ingredients and pour over chicken. It will be thick, make sure all pieces get coated well. Let chicken marinate for at least 30 minutes, up to 4 hours.

Grill chicken.

Heat corn on stove top until warm. Meanwhile, mix the seasoning ingredients together. When corn is warm, mix with the sauce.

Mix lime juice and cilantro into rice

To serve:
Put rice in bowl, then add corn and chicken. Top with optional toppings to taste.
