½ onion, chopped
Minced Garlic
1 30 oz bag of frozen cubed hash browns (southern style)
1 can Cream of Chicken
1 32 oz box Chicken Broth
1 8oz block of softened cream cheese (Do not use Fat Free, it does not melt)
8 oz bag of shredded cheddar cheese
Salt
Pepper
Optional Garnish- Green onion, croutons, bacon bits, extra cheese, sour cream, etc. | Directions | 1. Sautee garlic and onion until soft, add chicken broth (I use my immersion blender and blend until there are no visible onions so my kids will eat)
2. Add hash browns and cream of chicken
3. Bring to a simmer and cook until potatoes are tender.
4. Add softened cubed cream cheese, a hand full of cheddar cheese, salt and pepper. Stir until all cheese is melted, add more cheddar as needed for taste or to thicken. I have used anywhere from a handful to the entire bag depending on desired thickness.
