Cheesy Mexican Chicken and Rice (print)

Ingredients
Cheesy Mexican Rice & Chicken
*4-5 chicken breasts, cut into small chunks/cubes
*5 cups minute rice
*5 cups water
*3-4 heaping spoons Knorrs Tomato Bouillon
*2 Gordos Cheese Dips (Walmart by deli)
*2 packages McCormick fajita seasoning
*1/2 cup water
*Olive oil
*Nature's Seasons

Directions
In pot, mix water, bullion and rice. Bring to boil. Turn off heat and cover for 5 min. Stir & pour into 9x13.

In pan on stove, cook chicken in 1T. Olive oil. Season with Nature's Seasons (I legit use this on everything). Drain off liquid once cooked. Add in fajita mix and 1/2 water. Toss and cook til water evaporates. Pour on top of rice.

Heat cheese in microwave. Pour one container over the top of pan, toss gently. Pour the second container and leave on top.

Less than 30 min start to finish!!! Eat with tortilla chips, in a tortilla, or in a bowl...so good! Add pico, guac, sour cream, etc
