Cheesy Meatloaf Bombs (print)

Description: Personal meatloaves stuffed with cheese
Ingredients
2 pounds ground beef
1 pound ground pork
1 bag sharp cheddar
2 eggs
1T liquid smoke
1/2 milk
1/4 c mayo
3/4 cup Italian bread crumbs
1/2 sleeve (or a full sleeve of the Sam's ones) crushed Club crackers
1/2 finely diced white onion
Small jar mushrooms finely diced (you don't taste them-Luke had no idea they were in it!)
Handful bacon crumbles
1T Worcestershire or Dales (whichever you have)
Garlic salt
Pepper

Sauce:
1 cup ketchup
1/2 cup brown sugar
2T mustard
Splash liquid smoke

1 block cheddar cut into 12 cubes
Directions
Mix together all ingredients with hands.
Mix together sauce separately.

Put 2 spoonfuls of sauce into meat mixture.

Make 12 giant meatballs with a cheddar cube in middle. Place into baking dish (mine was a deep 9x13).
Bake at 375 for 30 min. Flip meatballs over and bake another 20 minutes. Blob rest of sauce all over the tops letting it drizzle down, bake another 10-15 min til sauce is bubbly.
