So I kind of make up the rub based on what's in my cupboard, but the gist is similar to a tub you would put in meat in the smoker :) | Ingredients | RUB: (all approximate)
6 heaping tablespoons brown sugar
3 heaping teaspoons smoked paprika
2 teaspoon dried oregano
2 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon pepper
1/2 teaspoon chili powder
1 pack Sams chicken breasts, each one cut into 3 or 4 pieces and pounded
Olive oil spray, PAM might work, I just have both and use the olive oil one
GRAVY:
1 stick melted butter
Small carton heavy whipping cream (I have also had 3/4 of a large carton leftover and used that as well)
2 cloves garlic, minced or finely chopped (I use a squeeze of garlic paste)
2 teaspoons parsley
1-2 teaspoons any BBQ/Steak/Mesquite season all type seasoning (I literally use whatever I have in cupboard, they all basically give same flavor)
**Drippings from pans, this is what makes the gravy!** | Directions | I cover two cookie sheets with foil and spray them with olive oil spray. The Sam's pack of chicken cut up seems to fit perfectly on the two trays. Spray the tops of each piece of chicken decently with olive oil spray. Mix together all ingredients of the rub and put all over the tops of the chicken coating down to even on the sides. Basically the whole pan is covered in the sugary mixture. Bake at 350 for about 20 to 25 minutes, my chicken is usually thin so it doesn't take long. I then take the hot pans and pour all of the drippings on them into the gravy and mix the gravy really well. Then put the chicken back in, turn on broil and let the chicken get a little bit caramelized, just for a few minutes. Don't overdo it, or chicken will dry out quick! Serve the chicken with the gravy.
