Apple Pie Bars
Mix 4 sticks softened butter, 3/4c sugar, 1/2c brown sugar, 2t vanilla. Add in 1.5t kosher salt, mix again. Add 4c flour gradually while mixing.
Put a little more than 3/4 of dough into Sam's baking sheet lined with parchment, press down. Refrigerate for 20 min.
Bake at 350 15-20 min until barely golden brown.
Make crumb topping using leftover shortbread and mix with 1/2 stick softened butter, 1t vanilla, couple shakes of cinnamon, 1/4c of both white and brown sugar. Mine looked loose but it clumped together well when I squeezed it.
Peel and thinly slice 4 granny Smith apples and 4 gala apples. Put into pot with 2T lemon juice, 1/4 sugar, 1t cinnamon, 1/8t nutmeg and 4T butter. Summer until apples soft and juice is evaporated.
Pour apple mix onto cooked shortbread. Sprinkle with crumb topping. Bake at 375 for 20min, until crumb topping is brown and "hard".
