Loaded Smashed Potatoes (print)
Provided By: Katie
Description:
Ingredients
Bag of full size, not mini, gold potatoes.
Small carton heavy whipping cream
2 stalks fresh parsley, chopped fine
Fresh bacon crumbles
Shredded cheese
3 sticks butter
Garlic salt/pepper
Directions
Boil full size gold potatoes whole, rinse with cold water and let dry/cool on paper towels.
Spray cookie sheet with PAM.
Smash potatoes with a fork. Put a tear in the skin before you do. They do not have to smash pretty...the cheese will bind them together.
Mix 3 sticks melted butter, fresh parsley and I'd guess about 1/2-3/4c heavy whipping cream. Sprinkle all potatoes with garlic salt and pepper. Add bacon crumbles on each.
Put a big spoonful of butter mix over whole potato.
Shredded cheese on top.
I took remaining butter and drizzled all over potatoes and tray.
Bake at 425 to crisp up and melt cheese.
