| Soups, Stews & Chili | Spicy (low calorie) vegetable soup (print) | Provided By: Katie | Description: I came up with this for when Craig goes on his diet binge ;) It makes a TON! Use a large pot. Freezes well! | Ingredients | 2 boxes vegetable broth
2 boxes beef broth
3 vegetable bullion cubes
1 head chopped cabbage
1 12oz bag frozen green beans
1 12oz bag frozen corn
1 32oz bag frozen peas, green beans, corn & carrots
1 can black beans, rinsed
2 white onions, chopped
2 spoons minced garlic
2 12oz bags California blend vegetables (mine were huge pieces so I cut some pieces in half)
2 cans HOT Rotel
1 can HOT diced green chiies
2 28 oz cans diced tomatoes
1 16 oz can tomato paste
Garlic salt, onion powder, pepper
1/2 t. Thyme & 1/2 t. Basil
3 bay leaves
| Directions | In pot, saute onion in a smidge of butter or olive oil. Add in cabbage and 1 box vegetable broth once onions are starting to soften. Add in bullion cubes, pepper, garlic salt and onion powder. Stir and simmer til soft.
Add in everything else, stirring well. Simmer 40 min and then remove bay leaves. | Notes | |
