| Pressure Cooker | Garlic Chicken & Rice Risotto (print) | Provided By: Katie | Description: I made this up on a whim usilng all things I had...turned out delicious, more like risotto! | Ingredients | 1 chunked up Rotisserie chicken (mine was seasoned with McKenzies and all of the juice from chicken container...I buy them at Sam's/Costco and freeze in baggies with the juice and some seasoning on it so I always have cooked chicken when I need it)
1 box or 2 cans chicken broth
2 cups white rice
1 large white onion, diced
2 carrots, thinly chopped/shredded
1.5 stick butter & 2T oil
Garlic salt, onion powder, pepper, garlic powder
2 heaping spoons minced garlic
Parsley
Shredded parmesan (6oz bag)
| Directions | Saute onion & carrots in butter & oil. Sprinkle garlic salt, pepper, onion & garlic powder into it/stir. Saute 10 min to soften vegetables. Add in chicken and garlic. Saute 5 more min.
Add rice and chicken broth. Stir together. Change pressure cooker to 10 min manual. Do a quick release. Sprinkle with parmesan cheese and parsley, stir. | Notes | |
