1 small/medium sweet yellow onion, diced small
1 clove garlic, peeled and minced finely
1/2 cup all-purpose flour
1 box vegetable broth
1 box chicken broth
4 cups half-and-half
4 vegetable bouillon cubes
2 lb bag chopped broccoli
1/2 bag carrot shreds
Garlic salt, pepper to taste
1 teaspoon smoked paprika
1 teaspoon dry mustard powder
pinch cayenne pepper, optional and to taste
8 ounces grated high quality extra-sharp cheddar cheese, with a small amount reserved for garnishing bowls | Directions | In small pan, cook chopped onion in 1/2 stick butter, add garlic at very end. In Dutch oven, melt 1 1/2 stick butter, add flour. Whisk 3-5 min until fully rouge appears. Slowly add in broth, box by box whisking whole time. Repeat with 1/2 & 1/2. Add onion mix to soup. Summer 10-15 min, whisking intermittently til thickens. Add in bullion cubes, all spices while simmering. Once thicker, add in carrots and broccoli. Sinner 20sih min until vegetables are soft.
