| Soups, Stews & Chili | Secret Ingredient Chili (print) | Provided By: Katie | Description: I made this up using a family favorite as my secret ingredient, it's light on beans as my people like less but you could double any of them. This recipe makes a large pot of chili, you could half it to make a normal amount | Ingredients | 2 medium yellow onions (diced)
1 orange pepper (diced)
1 yellow pepper (diced)
4T minced garlic (I didn't really measure, just dumped)
olive oil
2 lbs. ground beef
19 oz package italian sausage (cut casing off)
4T chili powder (add more for spicier chili)
4T oregano
3T cumin
1T garlic salt
1T pepper
1T onion powder
2T smoked paprika
12 oz can tomato paste
Heaping spoon beef base paste
1/2-3/4 box beef stock
28 oz Red Gold crushed tomatoes
2x- 28oz Red Gold petite diced tomatoes
2x- 15 oz ranch style beans
15 oz dark red kidney beans (drained and rinsed)
15 oz black beans (drained and rinsed)
2 cans Dr. Pepper!!!!!!
| Directions | Coat bottom of pan with olive oil. Saute peppers, onion and garlic until soft. Add in beef and sausage and cook until browned. Drain grease off. Add all spices and toss until well mixed. Add in tomato paste and stir well. Cook 2 minutes to "toast" the spices and paste. Add in Dr. Pepper, cook 2-3 min to absorb flavor. Add in rest of ingredients, stirring well. Simmer 1 hour. | Notes | I lean heavy/heaping on all spices...I also had a handful brown sugar. |
