| Beef | Taco Enchiladas (print) | Provided By: Katie | Description: I had a lot of leftover taco meat...this was an easy way to use it up! | Ingredients | Taco meat (1.5-2lbs)
12 small/med tortillas (I used 1/2 & 1/2...corn/flour mix)
1 block cream cheese
1 can petite diced tomatoes
1 small can diced green chilis
1/2 bottle taco bell sauce
1 can or 1 bag frozen corn
1 bag shredded cheddar (save for top)
2 bags shredded Mexican
| Directions | Warm up leftover taco meat, add cream cheese, tomatoes, sauce, green chilis & corn.
Layer into 9x13
Small amount of mix
3 tortillas (one has to be cut in half and used lengthwise)
