| Soups, Stews & Chili | From scratch Tomato Soup (print) | Provided By: Katie | Description: I've been trying to recreate the soup we had in Iceland...this is pretty close! | Ingredients | 2 lbs fresh tomatoes
1 small onion chopped
2 Thsp minced garlic
1 box Chicken Stock
1 cup heavy cream
Drizzle olive oil
2 tsp sugar
2 tsp salt
2 tsp black pepper
1/2 tsp dried basil
1Tbsp oregano
3 Tbsp tomato paste
2 Tbsp butter | Directions | Roast tomatoes, garlic, olive oil, onions, salt, and pepper at 425 for about 45 minutes. Peel skins with tongs (they fall right off). Toss skin.
Pour into a soup pot with chicken stock. Blend the soup with an immersion blender. Add in tomato paste, sugar, butter and heavy cream. Stir. Bring to a boil and simmer 20 minutes.
Eat with homemade croutons!!!
