| Dips | Chuys Deluxe Tomatillio Sauce (print) | Provided By: Katie | Description: OMG!!!! My favorite sauce! I happened to catch an owner of Chuys on TV making it and got the recipe:) | Ingredients | This is a two step recipe. You must first cook Chuy's Tomatillo Sauce and then add ingredients for the Deluxe Tomatillo.
Step One: Tomatillo Sauce
Margarine 3 tbsp.
Tomatillos, green, cleaned, roughly chopped 2 lbs (approx. 25)
1 bunch cilantro
2 small or 1 large bunches green onions, chopped .
Jalapeno slices, with juice 1/8 cup
Lime juice, fresh 1 tsp
Water 3 cups
Vegetable bullion cubes x9.
Salt, minced garlic, pepper and sugar 1 tsp of each
Cornstarch 5 heaping tbsp.
Step Two:
Tomatillo sauce (hot(From above)
Sour cream 16 oz.
Garlic salt 1 tsp
Black pepper 1 tsp | Directions | Step 1
1. Clean and wash the vegetables.
2. Heat margarine in a large stock pan
3. Put cilantro, green onions, jalapenos, lime juice, garlic and tomatillos in a food processor
4. Blend until pureed
5. Add tomatillo mixture to margarine. Sauté 10-20 minutes until it stops foaming.
6. In separate bowl, mix cornstarch completely in water.
7. Stir vegetable cubes, salt, pepper, and sugar into tomatillio mixture, continue simmering 10 min.
8. Add cornstarch/water to tomatillio puree. Bring to a boil, then continue to simmer (low boil) for approx. 10 minutes, stirring constantly until sauce thickens.
9. Add sour cream, pepper and garlic salt. (season to taste) Blend at high speed with hand mixer until thoroughly mixed.
Serve warm as dip or over tacos, enchiladas, etc...
