carrots
celery
onions
| Directions | wash chicken and set in large pan of water, don't cover chicken completely
add salt
put a little above simmer. bring to a slow boil
scrape off the scum
add carrots, celery and onions
cook slowly(approx 3 hours) with lid slightly cocked, not completely covered
cook until chicken falls apart.
separate vegetables, remove chicken and strain the broth | Notes | |
