| Sides | Parmesan Potato Stacks (print) | Provided By: Mom | Description: OMG.....DELISH!!!!!!!! | Ingredients | ~ 3T. melted butter (probably used closer to almost 4)
~ 2 T. fresh shredded parmesan cheese (just used my hand and threw in 2 LARGE pinches)
~ 1 t. garlic powder (just shook in)
~ 1 t. thyme (just shook in)
~ 8-10 Gold potatoes
~ I also used McKenzies seasoning (I sprinkled a bunch of this, but if you don't have any, no big deal)
| Directions | ~ preaheat oven to 350
~ lightly grease a cupcake pan with PAM and set aside(girls, you will want to double this for your families)
~ slice the potatoes very thinly and place into a large bowl (I left the skin on. No need to put them )in water. Just add dry to the bowl)
~ add the parmesan cheese, spices, and melted butter
~ toss the mixture with the hands to coat evenly
~ Grab some potatoes and put them into stacks. Repeat so that all of the tins are full.
~ add some salt and pepper to the tops.
~ My stacks only took about 30 minutes to bake uncovered. Put a knife down into them to check for tenderness, they will cook up quickly since they are cut so thin.
~ Let them sit for a few minutes before serving.
~ Use a spoon to scoop them out. They will hold their shape and look just like little stacks of out of this world goodness!!!
