Dad's Favorite Meatloaf! (print)
Provided By: Mom
Description: Ok...so Dad said "why do you always have to try new recipes? Can't you just make the same kind you always make"? Then I made this meatloaf. He then declared this his VERY FAVORITE MEALOAF and apologized!!! You guys have to try it! Delish!
Ingredients
~ 1# ground chuck. (I used 90/10)
~ 1/2 ground pork
~ 10 slices bacon, cooked and crumbled. I did this, but next time I would just use real bacon bits.
~ 1c. grated cheddar cheese. (I always grate fresh cheese, I bought a 16oz. block)
~ 2 eggs lightly beaten
~ 1/4 c. seasoned breadcrumbs (I used Progresso garlic, any of them would be good)
~ 1/4 c mayo (yes, mayo!)
~ 1 T. Worcestershire sauce
~ 1/4 t. salt (didn't measure....just added)
~ 1/4 t. pepper (didn't measure...just added)
~ 1/3 c. ketchup
~ 2 T. mustard
Directions
~ preheat oven to 350

~ combine beef and pork and next 8 ingredients, mix well.
~ combine ketchup and mustard. Stir 1/4 c. ketchup mixture into meat mixture, reserving remaining ketchup mixture.
~ press meat into a into a 9x5x3 loaf pan.
~ bake uncovered for about 45 min. Take out and spread remaining ketchup and mustard mixture on top and return to oven for about 15 minutes or until no longer pink. Let sit for a few minutes. Take out of pan with a spatula, put onto plate and slice.
~ Served with the potato stacks I posted under Sides! YUMBO!!!
