I didn't follow any of the measurement amounts, just eyeballed everything.
-Avocados (as many as you want- I made 2 for Jeremy and it was more than enough)
-flour ( I used about 1/2 cup- just need enough to dredge avocados in)
-buttermilk (I used about 1 cup- again, just need enought o coat avocados 2x each)
-sleeve of saltines, crushed into crumbs (made enough for about 3-4 avocados)
-jar of green chili sauce
-monterey jack cheese (about 3 cups or so)
-Sam's club size can of chicken
-taco sauce
-lemon juice
-cumin
-taco seasoning
-salt/pepper
-minced garlic
-cayenne pepper
-garlic salt
-onion powder | Directions | Preheat oven to 350
Make chicken mixture (recipe didn't give one here's what I made):
shred can of chicken, mix with splash of lemon juice, some taco seasoning, taco sauce, minced garlic, salt/pepper and cumin.
add some shredded monterey jack.
Slice the avocados down the middle and remove the pits and skins. Fill the hollow left by the pits with the chicken. Put the 2 halves of the avocados back together.
Place the buttermilk in a shallow dish, the flour in another shallow dish and the cracker crumbs (I mixed in garlic salt, onion powder, cayenne pepper, and cumin) in a third dish. Carefully holding the avocado together, dip it first in the buttermilk then roll it in the flour to coat completely. Dip it again in the buttermilk and roll it in the cracker crumbs until completely covered. **I placed two toothpicks in each to hold them together**
Heat about 4 cups of oil in a deep saucepan over medium-high heat. Deep-fry the avocado until golden brown. Remove the avocados with a slotted spoon and drain on paper towels.
Place the avocados in a shallow casserole and press firmly to flatten just a little. Cover the avocados with the green chile sauce and monterey jack cheese and place in the oven until the cheese melts, about 10 minutes.
