Grandma Bette's Nut Rolls (print)

Description:
Ingredients
4 c. flour
1/2 t. baking soda
1/2 t. salt
1/2 pound butter

-Sift together and work in butter well

MIX:
1 + 1/3 c. sour cream
5 egg yolks
1 t. vanilla

DISSOLVE:
1 cake fresh yeast in 3 T. lukewarm water. (Cake yeast is in the dairy section but is hard to find. 1 envelope rapid dry yeast = 2 + 1/4 teaspoons. = 1 cake fresh yeast)

NUT MIXTURE:
Grind 2# nuts till fine. Add 1 c. sugar and mix together before putting nut mixture in rolls.

Directions
Add yeast mixture, then add the cream and the egg yolk mixtures. Dough will seem very soft, but keep working until dough is off hands. Divide into 5 equal parts, put on greased waxed paper. Put in refrig. overnight. Roll out one ball at a time on board or counter sprinkled generously with sugar. Roll out thickness of a pie dough. Beat 5 remaining egg whites with 6 T. sugar. Add 1 t. lemon extract (don't spread clear to edges). Spread 1/5 of mixture on dough. Then spread nut mixture about 1/4" thick. Rollup tight. Bake on parchment paper on cookie sheet @325 for 25 minutes.Cool on wire racks.




Notes
1 recipe = 5 rolls I always wrap cooled rolls in saran wrap and then foil.
