Mexican lasagna (print)
Provided By: Kerry
Description: A Mexican flavored lasagna-like dish I made up when I had nothing to make for dinner and limited ingredients on hand :)
Ingredients
Large Tortillas (about 6 or so)
1 can diced tomatoes with garlic and basil
salsa
taco sauce (optional)
taco seasoning
shredded cheddar
1 can (15 oz) nacho cheese
2 pounds ground beef
Directions
-heat oven to 375
-Cook and drain the beef
-Mix the tomatoes and the taco seasoning (to taste, I used a lot- about 1 cup or so) in with the beef. *optional- add a couple shakes of taco seasoning in with the beef*
-Spread a thin layer of salsa and taco sauce(if using) in bottom of 9x13 (I used approx. 1/2 cup salsa and a couple shakes of taco sauce)
- Place tortillas in pan, ripping and piecing them as needed to fully cover the bottom of pan.
-spread 1/2 the can of nacho cheese over the tortillas.
-spread 1/2 of beef mixture on top of nacho cheese
-cover with shredded cheddar (about 1.5 cups or so)
-repeat all layers, starting with salsa and ending with shredded cheese.
bake uncovered for 25-30 min or until hot and bubbly.
