3 eggs
2 c. sugar
1 t. vanilla
2 c. grated zucchini
1 c. chopped walnuts
1 t. cinnamon
1 t. salt
1 t. baking soda
1/4 t. baking powder
1/2 c. sour cream
1 c . vegetable oil
| Directions | -preheat oven to 350 degrees
-grease 2- 9x5x3" loaf pans
-sift flour into large bowl, beat eggs & add with rest of ingredients to the flour in large bowl
-mix well with mixer, making sure that all zucchini and flour is mixed into batter
-scrape bowl often and mix for a few minutes
-pour into greased pans and bake for 1 hour and 20 minutes, lay foil gently over top if gets too dark. Cool in pans | Notes | |
