| Fruits & Veggies | Squash Casserole (print) | Provided By: Kelly | Description: Got this from my mother-in-law. Sooo good! | Ingredients | 1 small onion (chopped)
l tbsp Olive Oil
2 pounds yellow squash cut into 1-inch slices
Kosher salt and black pepper (optional)
1/2 cup good mayonnaise
l cup bread crumbs (1/2 cup in casserole - 1/2 on top)
1-1/2 cups grated Gruyere or Gouda
| Directions | Preheat the oveen to 350 degrees
In a heated skillet, cook the onions until light brown. Add the squash season with salt to
taste, and cook until the squash is tender about 10 mins. Remove skillet from heat and stir in mayonnaise, l cup of cheese and l cup of crumbled bread crumbs. Pour mixture into a baking dish. Add 1/2 cup of cheese and remaining bread crumbs on top. Bake until casserole is bubbly around edges about 25 to 30 mins. | Notes | |
