Ice Cream Cake (print)
Provided By: Kerry
Description: like the ones from Baskin Robbins
Ingredients
-box of cake mix, and all ingredients associated with making it
-tub of ice cream, any flavor. (Rectangle boxes work best, but circular ones are ok)
-2 pints of ice cream (this is the frosting so get any flavor, but without chunks, chips, etc. I use vanilla and food coloring to dye it)
-decorating frosting for edges
-clean cardboard, cake box (walmart has them in the baking section by the wedding stuff, joanns also has them)
Directions
-Bake a 9x13 cake according to directions, and let cool completely.
-Place cake on the clean cardboard
-Use a serrated knife to cut tub of ice cream in half.
-Lay two halves of the ice cream on top of cake, and trim cake to match the size. (if using the circular tub of ice cream you will want to use a spatula to smooth out the top)
-Place in the freezer to set.
-Let the two pints of ice cream soften for about 20-30 minutes, then stir continuously until it looks like frosting. (use food coloring to dye if desired)
-Frost the cake, then place in freezer to set.
-Once set use decorating frosting to finish the cake, refreeze until ready to serve
