yolks of 6 large eggs
2 cups condensed
1 cup lime juice, perferably key lime juice
3 tsp finely grated lime zest, preferably from key lime
1 egg white, beaten to soft peaks
1 c. whipping cream
| Directions | Cook pie crust until golden brown.
Lightly whisk egg yolks, then whisk in condensed milk, lime juice, and zest. Fold in beaten egg white.
Pour the filling into the baked and cooled pie shell.
Use the spatula to smooth the top, then cover with plastic wrap and let stand in the fridge overnight.
When getting ready to use, place in the freezer for an hour or so. Just before serving, whip the cream until soft peaks form and spread over lime filling. | Notes | |
