1 pound potatoes
1/2 pound carrots
1/2 bell pepper
1 large onion
1 fennel bulb
2 garlic cloves
2 tbsp oil
freshly cracked black pepper
1 1/2 tsp Italian herbs
1/2 cup chicken broth
4 tbsp balsamic vinegar
Directions
Place wedged potatoes, wedged fennel, sliced bell peppers and carrots into foil pan.
Use a large bowl to combine the oil with the Italian herbs, grated or chopped garlic, and chicken broth.
Pour over veggies and toss.
Season with a generous amount of salt and cracked black pepper.
Cover with aluminum foil bake at 450F for 45 minutes.
While veggies roast, brown the sausages. Don't cook all the way through, just lightly brown them.
Slice sasuage into large chuncks and add to veggies when they are fork tender.
Pour the balsamic vinegar over.
Place the tray back in the oven, uncovered, for 25 to 30 minutes.
About half way through mix and be sure everything is covered in the juices.
