FYI...Hendo is short for Henderson, where this tasty treat was created :) | Ingredients | 1 pkg bun length hot dogs
8 fresh sub buns
bacon (16 slices)
Mayo
Pinto Beans
Green Salsa
Mustard
Onion
Tomato
8-10 Jalapeno rings
Cajun Seasoning
Nacho Cheese
2 slices Chipotle Cheddar Cheese (or any other spicy cheese)
oil for frying | Directions | Heat oil to 350, meanwhile, dice and saute the onion, dice the tomato, and finely chop the jalapeno rings
Cook the pinto beans according to the directions on the can.
Slice the hot dogs, lengthwise, 3/4 of the way through, place jalapeno pieces in each.
Slice the cheese into 8 slices and place 2 slices in each hot dog. Coat each dog with cajun seasoning.
Wrap each dog with 2 slices of bacon and hold in place with toothpicks. (Tightly spiral bacon down the dog, each slice should cover 1/2 of the dog) Lightly sprinkle dogs with more cajun seasoning.
Fry hot dogs until bacon is crispy
Cut the buns down the center of the top, creating a pocket for the dog. (Leave about 1/2 inch on either end)
Place dogs in buns, top with mayo, mustard, salsa, nacho cheese, onions, tomatos and beans
***These are also good plain with just regular cheddar cheese and bacon***
