Slow Cooked Ribs (print)

Description: A tedious but really yummy way to cook ribs on the grill
Ingredients
rack of ribs

"Magic Dust" Ingredients...
3/4 cup firmly packed dark brown sugar
3/4 cup white sugar
1/2 cup paprika
1/4 cup kosher salt
4 T. garlic powder
2 T. ground black pepper
2 T. ground ginger
2 T. onion powder
2 T. dried rosemary, ground to a powder
Directions
Make "Magic Dust", keep in airtight container as you'll only use a little each time you make ribs and it will last for a few months.

Rub ribs with "Magic Dust" (about 1-2 T. per side) and wrap in saran wrap overnight

Turn on burner that you're NOT grilling over. You don't want direct heat!

Grill for 2.5 - 3 hours (depending on size of ribs) on a rack meaty side up over a foil pan 1/2 filled with water and a 1/2 bottle of liquid smoke at 225 degrees (low).

Make a foil boat and place ribs in it. Add 1 cup apple juice. Do not pour right on ribs or you'll lose all of the rub. Put back on grill (on top of rack) and grill another hour.

Make sauce in meantime...

Remove everything from grill. Take ribs out of boat, place on grill directly with heat DIRECTLY UNDERNEATH on low. Rub sauce on both sides and grill until sauce gets the glazed, crispy look (think BBQ chicken).
