Mexican Biscuit Bake (print)

Ingredients
2 T. butter
2 pkg biscuits (I used about 14 biscuits in mine)
1 and 3/4 cup salsa
12 oz shredded monterey jack cheese
1/2 c. chopped green pepper
1/2 c. sliced scallion
1 can sliced black olives, drained (optional)
Directions
1. Preheat oven to 375
2. Melt butter in glass 9x13 pan, then spread butter evenly around pan
3. Cut each biscuit into 8 pieces and place into a large bowl.
4. Toss with salsa
5. Evenly spoon the biscuit pieces into the pan
6. sprinkle with peppers, scallions and olives, top with cheese
7. Bake 30-35 minutes or until the edges are deep golden brown and center is set.
8. Let stand 15 minutes then cut into squares.
