1 lb shredded queso cheese
1 lb shredded fiesta cheese + more for sprinkling on top
24 burrito (dinner plate sized) tortillas
2 large cans (Sam's club) chicken, drained and shredded
3 large cans enchilada sauce
Cumin
Taco seasoning
Salt/pepper
| Directions | 1. preheat oven to 350
2. mix chicken, sour cream and cheese together (save some fiesta cheese to sprinkle on top)
3. Mix in salt/pepper, cumin and taco seasoning to taste. I open tops and shake in a large amount of each.
4. spread enchilada sauce in bottom of 2 full-size foil pans, enough to cover the bottoms of the pans.4
5. fill tortillas with mixture (a heaping "shovel" worth in each), roll, leaving sides open and place seam side down in pan, 12 in each pan.
6. Spread remaining enchilada sauce over top and sprinkle with cheese
